ELMHURST, IL, November 11, 2021 – Elmhurst Brewing Company is excited to introduce its new head chef, David Spingola, an experienced, savvy culinary leader and innovator who’s served demanding and diverse clientele at some of Chicago’s top restaurants.
Spingola, 53, joined Elmhurst Brewing after running his own catering company, Showthyme Catering, which specialized in high-end menus-to-order and “from-scratch” fare, for the past seven years. Previously, he ran the kitchen at Gibsons Bar & Steakhouse, where he oversaw 25 staff, including four sous-chefs. He was also “front-of-house” manager at The Gage, Billy Lawless’ gastropub on Michigan Avenue in downtown Chicago.
“We’re thrilled to have David join our team,” said Elmhurst Brewing co-owner, Frazer Donaldson, who, with partner Pete Dolan, opened their city’s first microbrew pub in 2018. “He brings a rare combination of high-level restaurant management acumen and menu design with a passion for creating great food. Importantly, he’s also skilled at pairing different beers with different foods, with delicious results. We’re confident he will help us continue to provide our customers with the excellent food they’ve come to expect.”
Spingola said his cuisine interests and experiences include Italian, Mexican, Asian and classic American, all “from-scratch,” with no pre-made ingredients. Growing up in the Edgebrook Sauganash neighborhoods on Chicago’s northwest side, in a house full of Italian immigrants, he was often pulled into the kitchen to help prepare meals.
The from-scratch food ethos, emphasizing originality and attention to detail, parallels in many ways with craft brewing, Spingola said.
“Scratch-made food is the name of the game,” Spingola said. “I love making my own dressings, sauces, marinades, brines and other critical components to an exceptional dinner. Made-from-scratch ensures we know exactly what goes into each and every meal we serve, and it’s an ideal that fits perfectly with Elmhurst Brewing’s approach to beer. I’m super excited to bring my love of food to Elmhurst Brewing.”
Spingola, who also owned and operated a from-scratch restaurant in Chicago’s Lakeview neighborhood, earned a business degree from the University of Tulsa and an Associates’ Degree in culinary arts from Le Cordon Bleu College of Culinary Arts in Chicago.
Later in November, Spingola will lead Elmhurst Brewing’s launch of a new menu. But don’t worry: many EBC favorites will remain, such as our fresh cheeseburger, pork fried rice and falafel wrap. Spingola will also lead the re-starting of EBC’s “Beer Dinners” in the near future.

In February 2022, we will hold our Fourth Anniversary Pajama Party, at which Head Brewer Cam Horn will lead the launch of four varietals of our oatmeal cookie stout, Smooth Jammies. We will also release and can a multi-blend, barrel-aged stout to commemorate this special milestone.
